This drink is simple to pull off, yet it offers an impressive step up to the classic mojito. I love this recipe for the 4th of July, though I can’t think of an occasion where this drink wouldn’t please.


Watermelon Mojitos

What could possibly be better than sipping on a cool and refreshing Watermelon Mojito by the pool or at a family barbecue in the lush summer months? This drink is simple to pull off, yet it offers an impressive step up to the classic mojito.
Ingredients
Mashed mint leaves. About 30 large ones
3–4 thick slices of fresh watermelon – put it in the food processor and puree it.
8 ounces of light rum
½ c of simple syrup ( 1 cup of sugar to 1 cup of water – boil the hell out of it until sugar is disolved)
Fresh squeezed lime juice – about 6 tablespoons.
Sprigs of mint to garnish.
Instructions
Throw it all together, blend, drink. In that order.
